Page 14 From Garden to Kitchen Wednesday, June 13, 2012 The Adams County Record Grilling season has returned and steak lovers everywhere have once again started to enjoy grilled steak. This season, add some more flavor to your grill with the following recipe for "Flatiron Steak and Tomatoes With Anchovy Vinaigrette," courtesy of "The Niman Ranch Cookbook," (Ten Speed Press). Flatiron Steak and Tomatoes 3 6 1 with Anchovy Vinaigrette Serves 4 Ingredients tablespoons extra virgin olive oil anchovy fillets packed in olive oil clove garlic, minced Pinch of crushed red pepper 2 1 2 tablespoons plus I teaspoon red wine vinegar flatiron steak, I pound Kosher salt and freshly ground black pepper large, ripe tomatoes Prepare and light a charcoal grill for cooking. Heat 2 tablespoons of the olive oil in a 6-inch skillet over low heat. Add the anchovies and break up with a wood- en spoon. Cook for 1 to 2 minutes, until the anchovies become aromatic. Add the garlic and crushed red pepper and cook for about 2 minutes, or until the garlic is cooked through but not browned. Remove from the heat and stir in 2 tablespoons of the vinegar. Set aside. When the grill is at its hottest (when the coals are red and glowing and too hot to hold your hand over the grill for more than a couple of seconds), season the steak on both sides with salt and pepper. Place the steak on the cooking grate directly over the coals and cook uncovered, turning once, for 4 to 5 minutes per side for medium rare; the timing will depend on the thickness of the steak. Transfer to a cutting board and let rest of 5 minutes. Slice the tomatoes and arrange in the center of a serving platter. Drizzle with the remaining 1 tablespoon olive oil and the remaining I teaspoon vine- gar. Season with salt and pepper. Slice the steak thinly across the grain and arrange over the tomatoes. Pour the anchovy vinaigrette over the top of the steak. Serve. A 2006 Harris Poll dis- covered that about 14 million seniors are now actively online. Whether they're using the Internet to e-mail friends and fam- ily, or engage in additional social interactions online, the numbers continue to climb. An increasingly popu- lar online tool for seniors is online banking. Many are finding that paying bills and managing funds via the computer is more convenient, especially for those with limited mobil- ity. Online banking enables you to review their accounts, transfer money, pay bills, and generally stay on top of finances without having to leave the house. Combined with direct deposit from social secu- rity and pension checks, online banking is ideal for computer-savvy seniors. While online bank- ing can be advantageous, seniors should be aware of some of the safety pre- cautions that should be instituted when transfer- ring information via the Internet. Reputable financial institutions will not ask you to provide personal information, such as social security numbers via e-mail. If you receive an unso- licited e-mail from a bank, call up your branch to ensure it's valid before respond- ing. Ihis is called "phishing:' Phishing scams frequently tar- get seniors with "bank notices" or official looking ,government documents." When visiting your financial institution on the web, always use a bookmark you cre- ated, or type in their web address (which is usually printed on your bank statement or checks) to access their site. Do not use a link e-mailed to you to visit a bank website, as these links can lead to websites designed by scam artists to look exactly like your bank site. Do not store account numbers, login infor- mation or passwords next to the computer. This makes it easier for your information to be accessed should someone break into your home. Use caution when using a debit card or credit card online to make purchases. Only buy from reputable retailers. Ensure that your card company does not hold you responsible forfraud- ulent purchases. Only use trusted sources to trouble- shoot computer prob- lems. While many computer techs are honest and reliable, there are others who aren't. If a tech asks for "remote access" to your computer, he or she can then access any information on your machine, so "remote access" might be a bad idea. Be wary of people you meet on social networking sites or anyone communicat- ing online. It's better to be safe than sorry. Scam artists make their living by building trust. Seniors tend to be more trusting than younger adults, espe- cially seniors who may have lost a spouse and are looking for com- panionship.
