THE COUNCIL RECORD - PAGE 6 - Wednesday, July 13, 1977 FROM SOUP TO NUTS Dear Soupy: Is it possible to freeze eggs? Answer Yes. Use fresh eggs and take them out of the shell. Freeze in specific amounts you will use immediately after thawing. To prevent the eggs from becoming gummy when thawed, add 1 teaspoon salt or 1 tea- spoon of sugar to each cup of whole eggs. Stir only enough to break yolks but not add air. Dear Soupy: Is there a standard recipe for canning syrup? Yes. For light syrup use 1 cup sugar to 3 cups of water. For medium syrup use 1 cup of sugar to 2 cups water and for heavy syrup use 1 cup of sugar to I cup of water. Dear Soupy: How can I prevent the odor of cooking onions or cabbage from being so strong? Answer: Add 1 tablespoon of lemon juice or a wedge of lemon with the skin on. Homemaking Hint I When making jelly it is important to know before starting how much natural pectin is in the juice. TEST FOR PECTIN-- The amount of pectin in juice may be estimated by testing a little of the juice with Epsom salts. Add 14 tablespoon sugar and sA tea- spoon Epsom salts to 1 tablespoon extracted fruit juice. Stir until sugar and salts are dissolved and let stand without stirring 5 minutes.
