THE COUNCIL RECORD - PAGE 6 - Wednesday, September 14, 1977 Stir & Stiwh NOTES FROM COUNTY EXTENSION SERVICE Homemaking Hint I Most germs that cause food poisoning are killed when you boil, broil, or roast foods. Itowever, when food stays warm for 2 hours or longer some germs produce poisons that are not destroyed by heating. Homemaking Hint II Because dark or dull pans absorb heat, foods bake faster and crusts bake browner in such pans than in shiney ones that reflect heat. Question: What will happen if I used iodized salt for curing fish instead of the non-iodized called for? Answer: According to Dr. John Miller, meat specialist for Idaho, the fish will keep as well but may develop a bluish-green tinge making it less appealing. The flavor should not be effected. If you use iodized salt in your canning or pickling it will probably be cloudy in the bottom due to the non- calking solution found in iodized salt.
