In recent weeks there have been several requests for dil/_ec tions on _making jerky. The following directions were taken from the Dutch Oven Cookbook. For the home method Carefully remove all fat and muscle, then season with salt, pep- per, oregano, marjoram, basil, thyme, smokey condi- ments, or what have you, . pounding the seasoning into c-}:he meat. Cut the meat into strips about one-half inch thick along the grain--not across the grain like a roast. Spread out on the wire cake racks used in your oven and turn the heat up to about 120 degrees. Leave the door partly open so the moisture can escape. Heat about four hours and then turn over and heat the other side for about the same time, or until the ,..eat has sariveled up, turned black, and there is no moisture in the center. When done the strips should be dry clear through, but flexible enough to bend may qualify for the program. Those ranchers that have already signed up may have changes on their cations, you will have to come in to make those changes. Horses have been included, dairy cows and bulls have gone to two animal units. For more information come in or call the ASCS Office. Some things we accept only be- cause they have been around for years ... like the confusing language of financial agreements. For instance: When you last signed a purchase agreement or note, did you understand everything? Probably not ... because most of us would have needed a legal expert to translate it. We don't think that is right for either party. So, why not say it in plain English? We have simplified the wording of our customer forms. Now, when you come in to talk over a loan, you can better read and understand the agreement, Here's the old and thenew. Check the difference. OLD: "The undersigned Buyer, hereby buys on the terms and conditions below and on the reverse side, the follow- ing described merchandise, delivery and acceptance of which in good order is hereby acknowledged by Buyer,..." Simple interest and simple forms.., for easier understanding. II Council I Ill Ill I II II Ill @. + " 111 u i NEW: "This is the sale and loan agreement for the mer- chandise that's described below.'" Note the new version. Straight and simple. It's something we both understand and can feel confi- dent in signing because we know the terms in detail. Understandable. Confident. Although Simple Forms are the latest innovation, the Simple Interest they can also give you is nothing new at Idaho First. You can have more control over your loan interest costs.., and those charges become much more clear and easier to understand. Our Simple Interest Note tells you how long you have to repay the loan, what your monthly payment will be, a breakdown of costs, total interest to be paid.., everything you want to know about your loan is there in plain English.
