HINTS
The use of gelatin gives

a nutritious protein food, and

ASCS NOTICE
The EFP (Emergency
Feed Program) under the
Food and Agriculture Act of
1977 has new provisions.
The purpose of this pro-
gram is to prevent ranchers
from selling their foundation
herd. Anyone able to show a
substantial loss and a need

To check the "doneness"
of meat, cut a slit in it near
the bone {or in the center of

LEMON JELLO CAKE
Mix: 1 pkg. yellow cake
and i pkg. lemon jello mix.
Add: 3/4 cup water; 3/4 cup
oil; 4 eggs.
Beat at low speed. Bake at
350 degrees for 35 to 45
minutes. While c a k e is
baking, mix 2 cups powdered
sugar juice of 2 lemons.
When'the cake comes out of
the oven poke holes in it with
a fork - pour mixture over it.
This should form a glaze and
moisten the cake. +
FRENCH ICE CREAM
4 c. light cream
3 eggs, separated
1 c. sugar
2 teaspoons vanilla
¼ teaspoon salt
Beat the egg yolks until
smooth: add half of the
sugar, and beat again until
the sugar is dissolved. Beat
the whites to a stiff froth,
and stir into the yolks and
sugar. Add the cream and
the remainder of the sugar,
and cook in a double boiler
for 15 minutes, or until it has
thickened. Stir the mixure
while it cooks. Cool quickly,
add flavoring, and freeze.
LEMON SHERBET
1 and ¼ cups sugar
Vs cup lemon juice
Grated rind of 1 lemon
¼ teas. lemon extract
2 cups whole milk
Combine the sugar, lemon
juice, rind, and extract. Add
the milk and stir until the
sugar is dissolved. Freeze;
remove to a chilled bowl, and
beat well. Return to the
refrigerator, and freeze.
In recent weeks there have
been several requests for
dil/_ec tions on _making jerky.
The following directions
were taken from the Dutch
Oven Cookbook. For the
home method Carefully
remove all fat and muscle,
then season with salt, pep-
per, oregano, marjoram,
basil, thyme, smokey condi-
ments, or what have you,
. pounding the seasoning into
c-}:he meat.
Cut the meat into strips
about one-half inch thick
along the grain--not across
the grain like a roast.
Spread out on the wire
cake racks used in your oven
and turn the heat up to about
120 degrees. Leave the door
partly open so the moisture
can escape. Heat about four
hours and then turn over and
heat the other side for about
the same time, or until the
,..eat has sariveled up,
turned black, and there is no
moisture in the center.
When done the strips
should be dry clear through,
but flexible enough to bend
may qualify for the program.
Those ranchers that have
already signed up may have
changes on their
cations, you will have to
come in to make those
changes. Horses have been
included, dairy cows and
bulls have gone to two
animal units.

LESSONS ON CHILDRENS
STUFFED RIDING
ANIMALS TO BE
PRESENTED
The Adams County Exten-
sion Office will be presenting
a 5 lesson series on making
childrens stuffed riding ani-
mals starting November 10.
The lessons are free. Pat-
terns are available to share
but the other supplies cost
from 8 to 12 dollars. To sign
up contact Fran Ogden or the
Extension Office at 253-4271
